Farinata: Α Gluten-free bread from neighboring Geno

 

Some say that the first farinatas may have been inspired by Roman soldiers who, on duty (and in their dietary need), made pie with chickpeas flour and water.

Others disagree with this theory, but they certainly associate farinatas with the city of Genoa, and with the eating habits of the wider area.

 

But let's look at exactly what this meal is about and why it's worth trying, but also be inspired by the dietary suggestions of our experienced neighbors.

 

These are fried pies with chickpeas, which we will accompany here with basil pesto, red onions and rosemary.

 

WE WILL NEED:

 

for farinatas

1 liter of sparkling water

2 tbsp. salt

300 g of chickpea sifted

100 ml of olive oil

1 medium red onions

2 sprigs of rosemary

 

for basil pesto

50 g of kernel seeds

50 g of parmesan grated

1 sk garlic melted

80 g basil leaves

120 ml of olive oil

 

 

OUR RECIPE

 

1. Pour the sparkling water into a bowl and add the salt, chickpeas and 1.5 tablespoons of olive oil. Whisk the mixture until it has a thick slurry. Leave it on for 4-5 hours (or overnight) to start the fermentation.

2. Preheat the oven to 200 C to get it ready for the farinata, and in the meantime prepare the pesto sauce. First heat a small pan to roast the pineapples until they turn brown. We keep a few if we want to garnish.

3. Beat the remaining seeds in the multi with parmesan, garlic, basil leaves and a little salt and pepper. Gradually add olive oil, whisking until smooth.

4. To make the farinatas we need a large frying pan (also suitable for the oven), which is heated to medium to high heat. Sprinkle with olive oil, pour some of the batter into the pan and shake the dough to spread.

5. Fry for 1-2 minutes and then slice the onion and rosemary on top. Put the farinata in the oven for 10-12 minutes.

6. Repeat the same procedure with the next 4-5 tablespoons of the pesto sauce and garnish with whole pineapples.
